Ingredients

4 boneless, skinless chicken breasts

2 tbsp soy sauce
2 tbsp honey
2 tbsp olive oil
1/2 tsp black pepper
1/4 tsp salt

1 cup fresh pineapple, diced
1 cup fresh mango, diced
1/4 cup red onion, finely chopped
1 jalapeño, seeded and minced (optional, for heat)
2 tbsp fresh cilantro, chopped
1 tbsp fresh lime juice
1/2 tsp honey (optional)
Pinch of salt
Instructions
1. Marinate the Chicken:
In a medium bowl, whisk together ginger, garlic, lemon juice, soy sauce, honey, olive oil, black pepper, and salt.
Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them.
Seal and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.
2. Make the Pineapple Mango Salsa:
In a large bowl, combine pineapple, mango, red onion, jalapeño, and cilantro.
