Passionfruit Bundt Cake
Ingredients:
• 2 ¾ cups all-purpose flour
• 2 teaspoons baking powder
• 1 teaspoon baking soda
• ½ teaspoon salt
• 1 cup unsalted butter, softened
• 1 ¾ cups granulated sugar
• 4 large eggs
• 1 teaspoon vanilla extract
• ¾ cup passionfruit pulp
• ¾ cup sour cream
Glaze Ingredients:
• 1 cup powdered sugar
• 3 tablespoons passionfruit pulp
• 1 tablespoon heavy cream
Directions:
1. Preheat your oven to 350°F (175°C). Grease and flour a 10-cup bundt pan.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
3. In a large bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
4. Alternate adding the dry ingredients and sour cream to the butter mixture, beginning and ending with the dry ingredients. Mix just until combined.
5. Fold in the passionfruit pulp gently until evenly incorporated.
6. Pour the batter into the prepared bundt pan and smooth the top with a spatula.
7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
8. For the glaze, whisk together the powdered sugar, passionfruit pulp, and heavy cream until smooth. Drizzle over the cooled cake.
