**How to Make Traditional Czech Mazanec: A Festive Easter Bread**

Mazanec is a traditional Czech sweet bread enjoyed during Easter. Its soft, slightly sweet interior and golden crust make it a beloved holiday treat.

 There are a few variations in how to prepare it, but here’s a simple and classic approach.

**Ingredients:**  
- 500g all-purpose flour  
- 100g sugar  
- 250ml warm milk  
- 100g unsalted butter (softened)  
- 2 egg yolks  
- 25g fresh yeast (or 7g dry yeast)  
- Pinch of salt  
- 100g raisins or chopped almonds  
- Zest of 1 lemon  
- 1 egg (for brushing)

**Preparation Steps:**  
1. **Activate Yeast:** In warm milk, dissolve a teaspoon of sugar and add the yeast. Let it sit for 10-15 minutes until frothy.  

2. **Make Dough:** In a large bowl, mix flour, sugar, salt, lemon zest, and softened butter. Add the egg yolks and the activated yeast mixture. Knead into a smooth dough.  

3. **Add Fillings:** Fold in raisins or chopped almonds.  
4. **First Rise:** Cover and let the dough rise in a warm place for 1.5 to 2 hours.  

5. **Shape and Rise Again:** Shape into a round loaf, place on a baking sheet, and let rise for another 30 minutes.  

6. **Brush and Bake:** Brush the top with beaten egg and score a cross on top. Bake at 180°C (350°F) for 35–45 minutes until golden.

Mazanec is best served sliced with butter or jam. Some recipes add rum-soaked raisins or even a bit of vanilla for a richer flavor. However you make it, Mazanec brings a taste of Czech tradition to your table.
