**Ingredients**:
- 1 cup chickpea flour (also called gram flour or besan)
- 1 cup water
- 2 tablespoons olive oil (plus extra for the pan)
- ½ teaspoon salt
- Optional: herbs like rosemary, thyme, or black pepper for extra flavor
**Instructions**:
1. **Make the Batter**: In a mixing bowl, whisk together the chickpea flour, water, olive oil, and salt until smooth. Let the batter rest for at least 30 minutes to an hour. This allows the flour to fully hydrate and improves texture.
2. **Preheat the Oven**: Set your oven to 450°F (230°C). Place a cast-iron skillet or oven-safe pan inside to preheat as well.
