 In a clay pot, heat coconut oil and sauté mustard seeds, fenugreek seeds, curry leaves, and dried red chilies. Add chopped onions and garlic, cooking until golden. Mix in turmeric, chili powder, and a pinch of curry powder. Add the mango slices and coat well with the spices.

Pour in thin coconut milk and simmer until the mangoes soften. Then add thick coconut milk and simmer for a few more minutes to create a rich, creamy texture. Season with salt and a touch of jaggery to balance the sourness.
