This traditional Italian eggplant recipe is a family treasure! Start by slicing 2 large eggplants into ½-inch rounds. Sprinkle with salt and let them sit for 30 minutes to release bitterness, then pat dry. Lightly coat each slice in flour, dip in beaten eggs, and pan-fry in olive oil until golden on both sides. Set aside.


For the sauce, sauté garlic and onion in olive oil, then add crushed tomatoes, salt, pepper, and fresh basil. Simmer for 15 minutes. In a baking dish, layer eggplant slices, sauce, grated Parmesan, and mozzarella. Repeat layers and finish with cheese on top.
