These oat baskets are crispy on the outside, creamy on the inside – and completely without flour or sugar.  Ideal for breakfast, brunch or as a healthy snack for children and adults.  I'll show you three fillings that you can easily vary – with banana & cocoa, ricotta & blueberries, and a lemony ricotta dip!  🍋🍌🫐

📋 Ingredients for the dough:
Water – 170ml
Butter – 50ml (can be replaced with coconut oil, vegan margarine or almond butter)
 Pinch ofsalt
Instant oats – 90g
 Eggs –2 pcs
 Bake for20 minutes at 180 degrees
 
 🧁 Filling 1: Lemon Dream
 Ricotta +Greek yogurt – 150g
 Lemon juice+ zest
 1 tspcornstarch
 Stevia totaste
 
 🍫 Filling 2 : Choco Crunch
 1 banana
Cocoa powder– 30g
 Peanut butter– 1 tbsp
 Roastedpeanuts to taste
 
 🫐 Filling 3: Blueberry  Cream
Ricotta + Greek yogurt – 150g
Blueberries – 100g
 1 tspcornstarch (mixed with water)
 Steviato taste
 
 💡 SUBSTITUTION TIPS AND TRICKS:
 –You can replace the butter with coconut oil, almond butter, or vegan margarine.
 –Ricotta can be replaced with cream cheese or quark.
 –Blueberries can be replaced with raspberries or sour cherries.
 –Grated dark chocolate also works instead of cocoa powder.
 – Thefillings can be kept in the refrigerator for up to 3 days.
