The Italian Steak Dish That's Better Than Steak au Poivre

Today we're making Italian-Style NY Strip Steak with Gorgonzola Sauce. I hope you love it!

INGREDIENTS
For the steak
1 thick New York strip steak
2 teaspoons Diamond Crystal Kosher salt
2 teaspoons coarsely cracked black pepper
For the fennel and onions
2 tablespoons (30ml) olive oil
2 tablespoons (28g) unsalted butter
1 head fennel - core, stalks, and fronds removed, sliced
1 medium onion - sliced
1 pinch salt
For searing the steak and the sauce
grape seed oil or other high smoke point oil
1/4 cup (60ml) dry white wine
1/4 pound (60g) mild gorgonzola cheese
1/2 cup (120ml) heavy cream
salt and pepper - to taste
