Today I'm sharing an easy chicken recipe with a delicious honey garlic sauce that's perfect for weeknights. This easy dinner idea comes together in under 15 minutes and is made from simple ingredients._______________________________________
HONEY GARLIC CHICKEN RECIPE:
INGREDIENTS:
1 lb (450g) chicken breast or thighs (boneless, skinless)
4 scallions or green onions
6 garlic cloves
1/4 tsp salt
1/2 tsp pepper (white or black)
1 tbsp cornstarch
1 tsp red pepper flakes
1 tsp dark soy sauce (optional for color)
1 tbsp butter (unsalted)
Cooking oil (as needed)
SAUCE:
1/3 cup honey
4 tbsp light soy sauce
1/4 cup chicken stock
1 tbsp rice vinegar
1 tbsp cornstarch
INSTRUCTIONS:
1. Cut the chicken into bite sized pieces and transfer to a bowl. Add 1/4 tsp salt, 1/2 tsp pepper (white or black), 1 tbsp cornstarch and mix well. Coat the chicken with 1 tbsp cooking oil. Set it aside while you prepare the remaining ingredients.
2. Finely chop the white parts of 4 scallions or green onions. Thinly slice the green tops and keep it separately.
3. Finely chop 6 garlic cloves. Add more or less based on your preference.
4. Combine all the sauces in a bowl and set it aside for later.
5. Heat some oil on medium high heat. Sear the chicken until golden and cooked through. Transfer it to a bowl.
6. In the same pan, retain 1 tbsp oil. Sauté garlic and scallion whites until lightly golden and fragrant.
7. Add 1 tsp red pepper flakes for a bit of heat. Sauté for about 10 seconds.
8. Add in the prepared sauce and mix well. Cook until it thickens to your liking.
9. Add 1 tsp dark soy sauce for a deeper color.
10. Add back the seared chicken and toss well. The chicken is already cooked so only heat until the chicken is warmed.
11. Add 1 tbsp unsalted butter and mix well. This adds so much flavor and makes the sauce extra glossy.
12. Garnish with the sliced scallion greens and enjoy!
