High-Protein Lentil Recipe
This high-protein lentil recipe is my favorite dinner. It has a rich flavor and is incredibly filling—it’s exactly the kind of simple home-cooked meal that always turns out perfectly. It’s perfect for a cozy lunch or a light dinner.📌 Ingredients:
1 Onion
Olive oil
1 Carrot
1 Sweet red pepper
1 Zucchini (I use half, but you can use 1 small zucchini)
1 Jalapeno pepper
10g Ginger
1 Clove of garlic
½ tsp Cumin
½ tsp Marjoram
½ tsp Dried ground paprika
Salt to taste
Freshly ground pepper
180g Red lentils
400ml Warm water
Fresh parsley
📌 Sauce:
50g Cashews
200ml Warm water
1 tbsp Lemon juice
1 tbsp Olive oil
