                                   Avocado Egg, and Veggie Bowl


Ingredients:

2 hard-boiled eggs, sliced 🥚

1 avocado, sliced 🥑

1/2 cup cherry tomatoes, halved 🍅

1/4 cup red onion, thinly sliced 🧅

1/2 cup sweet corn kernels 🌽

1/4 cup guacamole (optional) 🥑

2 tbsp crumbled feta cheese 🧀

Fresh cilantro, chopped 🌿

Paprika or chili powder for garnish 🌶️

Salt and black pepper to taste 🧂

Drizzle of olive oil 🫒

Squeeze of lime juice 🍋

Instructions:

Prepare Ingredients: Slice the boiled eggs, avocado, and cherry tomatoes. Thinly slice the red onion.

Assemble the Bowl: Arrange the eggs, avocado, cherry tomatoes, onion, corn, and guacamole in sections within a bowl.

Add Cheese and Seasoning: Sprinkle crumbled feta cheese, paprika, salt, and pepper over the bowl.

Garnish and Serve: Drizzle with olive oil and a squeeze of lime juice. Garnish with fresh cilantro.

Optional Additions:

Black beans for extra protein 🫘

Cooked quinoa or rice as a base 🍚

A side of tortilla chips for crunch 🥙
