This hearty and flavorful meal features juicy BBQ ribs, creamy mashed potatoes, caramelized sweet potatoes, and a fresh garden salad with soft-boiled eggs! 🥩🍠🥬

✅ Ingredients

🔹 For the BBQ Ribs 🍖🔥

1 rack baby back ribs

1/2 cup BBQ sauce 🍯

1 tbsp brown sugar

1 tsp smoked paprika

1 tsp garlic powder

1 tsp black pepper & salt

1 tbsp olive oil

🔹 For the Mashed Potatoes 🥔🧈

4 large potatoes (peeled & chopped)

1/2 cup heavy cream

2 tbsp butter 🧈

Salt & pepper to taste

🔹 For the Caramelized Sweet Potatoes 🍠🌿

2 sweet potatoes (cubed)

1 tbsp honey 🍯

1 tsp cinnamon

1 tbsp olive oil

🔹 For the Garden Salad 🥗🌱

1 cup mixed greens

1/2 cup chopped cucumbers 🥒

1/2 cup cherry tomatoes 🍅

1/4 cup red onion (finely chopped)

2 soft-boiled eggs 🥚

🔹 For the Greek Dressing 🫒🍋

2 tbsp olive oil

1 tbsp lemon juice 🍋

1 tsp Dijon mustard

1 tsp dried oregano 🌿

Salt & black pepper

👨‍🍳 Instructions

🔥 Step 1: Prepare & Cook the BBQ Ribs

1️⃣ Preheat oven to 300°F (150°C).

2️⃣ Rub the ribs with olive oil, brown sugar, paprika, garlic powder, salt, and black pepper.

3️⃣ Wrap in foil and bake for 2.5-3 hours until tender.

4️⃣ Brush BBQ sauce over the ribs and broil for 5-10 minutes until caramelized.

🥔 Step 2: Make the Mashed Potatoes

1️⃣ Boil potatoes until fork-tender (about 15-20 minutes).

2️⃣ Drain and mash with butter, heavy cream, salt, and pepper.

🍠 Step 3: Roast the Sweet Potatoes

1️⃣ Toss cubed sweet potatoes with olive oil, honey, and cinnamon.

2️⃣ Roast at 400°F (200°C) for 25 minutes, flipping halfway.

🥗 Step 4: Prepare the Salad & Dressing

1️⃣ Chop all veggies and mix in a bowl.

2️⃣ Whisk together olive oil, lemon juice, Dijon mustard, oregano, salt, and pepper for the dressing.

3️⃣ Drizzle dressing over salad and mix well.
