Hummus and Falafel Mezze Plate
Ingredients:
• 1 cup chickpeas (canned or cooked)
• 3 tablespoons tahini
• 1 lemon (juiced)
• 2 garlic cloves (minced)
• 1/4 cup olive oil
• 1 teaspoon cumin
• Salt to taste
• 10 small falafel balls (store-bought or homemade)
• 1 cup cherry tomatoes (halved)
• 1 cucumber (sliced)
• 1/2 cup olives (your choice)
• 1/4 cup feta cheese (crumbled)
• 4 pita bread (cut into wedges)
• Fresh parsley for garnish
Directions:
1. Prepare the Hummus:
o In a food processor, combine chickpeas, tahini, lemon juice, garlic, olive oil, cumin, and a pinch of salt. Blend until smooth and creamy. Add a tablespoon of water if needed to reach your desired consistency.
2. Assemble the Mezze Plate:
o Place the hummus in the center of a large platter, spreading it out with the back of a spoon.
o Arrange the falafel balls, cherry tomatoes, cucumber slices, olives, and pita bread around the hummus.
3. Add Finishing Touches:
o Sprinkle crumbled feta cheese over the vegetables and garnish with fresh parsley. Drizzle olive oil on the hummus for an extra touch.
4. Serve:
o Serve immediately or refrigerate for up to 1 hour before serving.
