                                       Pomegranate Goat Cheese Log


Ingredients:
• 8 oz goat cheese (softened)
• 1/4 cup cream cheese (softened)
• 1/4 cup finely chopped fresh parsley
• 1/4 cup finely chopped pistachios
• 1/2 cup fresh pomegranate arils
• Crackers or crostini for serving



Directions:
1. In a medium bowl, mix the goat cheese and cream cheese until smooth and well combined.
2. Place a sheet of plastic wrap on a flat surface. Spread the cheese mixture in a rectangular shape onto the wrap.
3. Sprinkle parsley, pistachios, and half of the pomegranate arils evenly over the cheese mixture.
4. Using the plastic wrap, roll the cheese mixture tightly into a log shape. Seal the ends and refrigerate for at least 1 hour to firm up.
5. Before serving, carefully unwrap the cheese log and roll it in the remaining pomegranate arils for a vibrant garnish.


6. Serve with crackers or crostini and enjoy the burst of flavors in every bite!
