BBQ Chicken Salad
Smoky Grilled BBQ Chicken Salad with Avocado Ranch Dressing
Ingredients:
2 boneless, skinless chicken breasts
1/2 cup barbecue sauce
6 cups romaine lettuce, chopped
1 cup cherry tomatoes, halved
1 cup canned black beans, drained and rinsed
1 cup corn kernels (fresh, canned, or frozen)
1/2 red onion, thinly sliced
1 avocado, diced
1/2 cup shredded cheddar cheese
1/4 cup fresh cilantro, chopped
1/2 cup tortilla strips (for crunch)
Avocado Ranch Dressing:
1 ripe avocado
1/2 cup Greek yogurt
1/4 cup buttermilk
1 tablespoon fresh lime juice
1 garlic clove, minced
1 teaspoon dried dill
1 teaspoon onion powder
Salt and pepper to taste
Directions:
Marinate the Chicken: In a bowl, coat the chicken breasts with barbecue sauce. Cover and let marinate for at least 30 minutes.
Grill the Chicken: Heat a grill or grill pan over medium heat. Cook the chicken for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). Let it rest for 5 minutes before slicing.
Make the Dressing: In a blender, combine avocado, Greek yogurt, buttermilk, lime juice, garlic, dill, onion powder, salt, and pepper. Blend until smooth. Adjust consistency with more buttermilk if needed.
Assemble the Salad: In a large bowl, layer romaine lettuce, cherry tomatoes, black beans, corn, red onion, and avocado. Top with sliced BBQ chicken, shredded cheddar cheese, cilantro, and tortilla strips.
Drizzle & Serve: Pour the avocado ranch dressing over the salad, toss gently, and enjoy!
