👨‍🍳 Ingredients (Serves 2):


🐟 For the Halibut:

• 2 halibut fillets (150g each)

• 1 tbsp unsalted butter

• 1 sprig thyme

• 1 garlic clove, lightly crushed

• Salt & white pepper to taste


🌼 For the Saffron Beurre Blanc:

• 100ml dry white wine

• 50ml fish stock

• 1 small shallot, finely diced

• 100g unsalted butter, cubed and chilled

• A pinch of saffron threads

• Salt to taste


🥄 For Garnish:

• 10g high-quality caviar

• Fresh chervil or microgreens

• Lemon zest


👨‍🍳 Instructions:


1️⃣ Prepare the Beurre Blanc: In a saucepan, reduce the white wine, fish stock, and shallots until nearly dry. Add saffron and slowly whisk in cold butter cubes over low heat until emulsified. Season lightly and keep warm.


2️⃣ Sear the Halibut: Season the halibut fillets with salt and white pepper. In a pan over medium heat, sear in butter with thyme and garlic, basting continuously until golden and flaky.


3️⃣ Plating: Spoon the saffron beurre blanc onto a warm plate, gently place the halibut fillet on top, and delicately add a spoonful of caviar. Finish with microgreens and a hint of lemon zest for freshness.
