Chatpatta Baingan Aloo Recipe
Chatpatta Baingan Aloo is a spicy and tangy North Indian-style dish that pairs perfectly with roti or rice. To prepare it, start by heating 2 tablespoons of oil in a pan.
Add 1 teaspoon cumin seeds, followed by chopped onions and sauté until golden. Mix in ginger-garlic paste, then add chopped tomatoes and cook till soft. Add turmeric, red chili powder, coriander powder, and a pinch of garam masala.
Dice 1 medium potato and 1 medium brinjal (eggplant). Add the potatoes first and cook halfway, then stir in the brinjal. Cook covered for 10-12 minutes until tender. Add salt and a dash of amchur (dry mango powder) for a tangy kick. Garnish with fresh coriander leaves.
For variation, add green chilies or kasuri methi for extra flavor. Serve hot with roti, puri, or jeera rice for a satisfying meal.
