**How to Make Sri Lankan Traditional Chicken Curry**

Sri Lankan traditional chicken curry, or *kukul mas curry*, is a flavorful dish rich in spices and coconut milk. To prepare it, start by marinating 500g of chicken with turmeric, salt, chili powder, and curry powder.

 Let it rest for 30 minutes. In a pot, heat coconut oil and sauté sliced onions, garlic, ginger, curry leaves, pandan leaf, and green chilies until golden. Add the marinated chicken and cook until it browns slightly. 

Stir in roasted curry powder, cinnamon, cloves, cardamom, and fenugreek. Add chopped tomatoes and cook until soft. Pour in coconut milk and a little water, cover, and simmer for 20–25 minutes until the chicken is tender and the gravy thickens. Adjust salt to taste. 

Serve hot with rice, roti, or string hoppers. This curry embodies the bold, aromatic flavors of Sri Lankan cuisine.
