Chicken Opor, or *Opor Ayam*, is a traditional Indonesian dish known for its rich coconut milk gravy and fragrant spices.

 To prepare it, start by sautéing a blended spice paste made from garlic, shallots, ginger, turmeric, coriander, and candlenuts in a bit of oil until aromatic. Add chopped lemongrass, bay leaves, and kaffir lime leaves for depth.

Next, add chicken pieces (preferably bone-in for flavor) and stir until lightly browned. Pour in coconut milk and a bit of water, then simmer gently for 30–45 minutes until the chicken is tender and the sauce thickens. Add salt, sugar, and a dash of white pepper to taste.

Serve Chicken Opor hot with steamed rice or *ketupat* (rice cakes). Garnish with fried shallots for added texture. This comforting dish is perfect for festive occasions or cozy family dinners.
