Sri Lankan Style Fish Curry
Sri Lankan sardine fish curry is a flavorful and spicy dish that pairs well with rice or bread. To make it, first heat coconut oil in a pan and sauté sliced onions, garlic, ginger, and green chilies. Add curry leaves for aroma.
Once golden, mix in spices: turmeric, chili powder, black pepper, and roasted curry powder. Stir until fragrant. Next, add cleaned canned or fresh sardines along with chopped tomatoes.
Gently mix to avoid breaking the fish. Add thick coconut milk and a little water to form a rich gravy. Simmer on low heat for 10–15 minutes until the flavors meld.
Optionally, add a dash of lime juice or tamarind for tanginess. Garnish with more curry leaves or fresh coriander. This dish is simple yet deeply aromatic, capturing the essence of Sri Lankan cuisine. Serve hot with steamed rice, string hoppers, or roti for a satisfying meal.
