Tomato Pie is a savory, cheesy Southern delight perfect for summer! Start by pre-baking a 9-inch pie crust until lightly golden. Slice 4 ripe tomatoes, sprinkle with salt, and let them drain on paper towels to remove excess moisture.

 In a skillet, sauté 1 chopped onion until soft. Layer the tomatoes and onions in the crust with torn fresh basil.

For the topping, mix 1 cup shredded sharp cheddar, ½ cup mozzarella, ½ cup mayo, salt, pepper, and a dash of garlic powder. Spread this creamy mixture over the top. Bake at 350°F (175°C) for 30–35 minutes until bubbly and golden.

Let it cool slightly before slicing to avoid a runny pie. Tomato Pie is best served warm or at room temperature with a crisp green salad. It's rich, comforting, and bursts with fresh tomato flavor—a true crowd-pleaser!
