Egg Chilli is a simple and tasty Indo-Chinese style dish that is perfect for beginners. One easy way to make chilli eggs starts by boiling eggs until hard-boiled, then peeling and cutting them into halves or quarters.
Lightly coat the eggs with cornflour, salt, and pepper, then shallow-fry until the outside becomes slightly crispy. This step adds great texture to the dish.
In a pan or wok, heat a little oil and sauté finely chopped garlic, ginger, green chilies, and onions until fragrant. Add sliced capsicum for crunch, then mix in soy sauce, chili sauce, tomato ketchup, and a pinch of sugar for balance.
A little water or vegetable stock helps create a glossy sauce. Gently add the fried eggs and toss carefully so they stay intact. Cook for a few minutes until the sauce coats the eggs well. Garnish with spring onions and serve hot as a snack, side dish, or with fried rice or noodles.
