Broccoli pasta
Recipe:
- pick florets from 1 medium-sized broccoli.
- in a bowl, bring water to boil; add broccoli florets; cook until medium tender; drain and set aside.
- in a pan, heat up 1 Tbsp neutral oil and add 1 diced red onion; sautée until translucent (3-4 min).
- add 4 minced garlic cloves; sautée until raw scent disappears.
- add 1/3 cup white wine; reduce for 3-5 min (liquid should be mostly gone).
- dissolve 1 Tsp tapioca starch in 1 cup full fat coconut milk; add to mixture.
- add 3 Tbsp nutritional yeast, Tsp ground pepper and 1/2 Tsp salt; whisk to combine (should become slightly thick).
- add cooked and drained pasta (200-250g), cooked and drained broccoli and a handful of sliced grape tomatoes; mix to coat.
