Green Goodness Bowl
Looking for a delicious meat free lunch idea? Try my bowl of spiced GF grains, roasted veggies and halloumi - great for meal prep and full of plant power!
In the bowl:
80g halloumi
1/4 head of broccoli, cut into small florets
1/2 courgette, sliced 1cm thick
1tsp garlic granules, smoked paprika, oregano
Pinch of salt
1tbsp olive oil
Handful Fresh spinach, dill and parsley
125g Persian-style lentils, rice and quinoa
1tbsp Green olives and pomegranate seeds
Fresh lemon juice
