               Speedy Falafel Quinoa Bowl


Craving something healthy, delicious, and super quick? Look no further! My falafel and quinoa bowl with grilled courgettes is packed with flavour and great for an easy lunch.


Quinoa salad:

125g cooked quinoa 

5 cherry tomatoes, halved

1/4 cucumber, diced

5 large mint leaves, finely chopped

Small bunch of parsley, finely chopped

10ml extra virgin olive oil

Juice of half a lemon


Courgettes:

1/2 courgette sliced into 1/2cm thick pieces

1/2tsp smoked paprika

1/2 tsp garlic and onion powder

1/2 tsp oregano

Pinch of salt and pepper

1tsp olive oil


Other ingredients:

50g hummus

5 green olives

30g feta

3 Sweet potato falafel 


Assemble the quinoa salad.


Slice the courgettes and coat in the oil and spices as mentioned above. Heat up a griddle pan and grill the courgette on a medium heat for 2-3 minutes each side.


Assemble the whole salad with the falafel, hummus, courgettes, quinoa salad and any other ingredients you wish to add. Enjoy!
