Punjabi Chicken Gravy is a rich, flavorful dish loved for its bold spices and creamy texture. Start by marinating 500g chicken with yogurt, turmeric, chili powder, and salt for 30 minutes.

 In a heavy-bottomed pan, heat oil or ghee and sauté whole spices like bay leaf, cinnamon, and cloves. Add finely chopped onions and cook until golden brown. Stir in ginger-garlic paste and cook till aromatic.

Now, add pureed tomatoes, coriander powder, garam masala, and a pinch of kasuri methi. Cook until the oil separates. Add the marinated chicken and cook on high flame to seal in the juices.

 Lower the heat, cover, and let it simmer till the chicken is tender. For a creamy touch, stir in fresh cream or butter at the end. Garnish with coriander leaves. Serve hot with naan, roti, or rice for a perfect Punjabi feast!
