🥖 Dough
4 cups all-purpose flour (500g)
1 tbsp instant yeast (10g)
2 tbsp sugar (25g)
1½ tsp salt (8g)
½ cup plain yogurt (120g)
¼ cup vegetable oil (60g)
1 cup + 2 tbsp warm milk (280ml)

🍗 Chicken Filling
4 cups cooked shredded chicken (500g)
1 large onion, finely chopped (150g)
½ cup green capsicum, finely chopped (50–75g)
2 tbsp oil (30g)
1 tsp salt (6g)
1 tsp black pepper (2g)
1 tsp paprika (2g)
½ tsp cumin (1g)
1 tsp coriander powder (2g)
1 tsp chili flakes (2g)
1 tbsp sumac (7g)
1 tbsp lemon juice (15g)
2 tbsp fresh parsley, chopped (8g)
4 tbsp cream cheese (60g)
⅓ cup crumbled feta cheese (40–50g)

🥚 Egg Wash
1 egg
1 tbsp milk (15g)
1½ tbsp sesame seeds

👩🍳 Method
Prepare the Dough
1. In a large bowl, combine flour, yeast, sugar, and salt.
2. Add yogurt, oil, and warm milk.
3. Mix until a dough forms.
4. Knead for 10–12 minutes until smooth and soft.
5. Place in a lightly greased bowl, cover, and let rise for 1–1½ hours or until doubled in size.
Prepare the Filling
1. Heat oil in a pan and sauté the onion until soft.
2. Add green capsicum and cook for 1 minute.
3. Add shredded chicken.
4. Season with salt, black pepper, paprika, cumin, coriander powder, chili flakes, lemon juice and sumac.
5. Cook for 2–3 minutes.
6. Add Cream Cheese mix well .
7. Let the filling cool completely.
8. Mix in feta cheese & fresh parsley
Shape the Fatayer
1. Divide the dough into 12 equal portions.
2. Roll each portion into a small circle.
3. Place 2 tablespoons of filling in the center.
4. Fold and seal into a triangle shape.
5. Arrange on a lined baking tray.
Second Proof
Cover lightly and let the shaped fatayer rest for 25–30 minutes.
Bake
1. Brush with egg wash.
2. Sprinkle sesame seeds on top.
3. Bake in a preheated oven at 200°C (400°F) for 15–18 minutes or until beautifully golden brown.
4. Brush lightly with olive oil or melted butter after baking.
5. Garnish with fresh parsley.
